This is a leaner version of those glistening strips of pork, called car su, displayed in shops throughout Chinatown. This tasty crunchy meat can be eaten hot or at room temperature. Serve leftovers on a bed of stir-fried vegetables.
It should be noted all ingredients are considered, but most of the marinade is discarded before cooking.
I wanted something lowfat, but still tasty. Unfortunately, I had a blonde moment, and forgot the egg (beaters), baby corn and peas. It still tasted pretty good!

I am not creative to find a better name.I found this amazing roasted eggplant dip /Baba Ganoush in my local Costco and since then I have made this sandwich many time.If you can suggest a better name,please feel free to let me know.

I created this recipe to use Chicken Dark Meat Fritter [nuggets] from Angel Food Ministries. Best if you weigh the meat. I prepare more rice than needed earlier in the week. Then use the left over rice in this recipe. Otherwise, add cooking time for the rice
