Tis is a great marinade for portabello mushroom, skirt steak and tofu.

I substituted parsley for cilantro, as my husband detests cilantro. Ourbestbites.com also called for chopped peanuts but we didn't have those, so they're not included here.

This is a great substitute for take-out, and much better for you!! Even the left-overs are terrific. I serve this dish over whole wheat noodles (lo-mein style) or brown rice (brown rice adds 100 calories per serving). Either way this recipe is filling and packed with flavor!
Mackerel is part of the same family as tuna. We've come to depend so heavily on tuna that it's now under a huge amount of pressure � this really is the time to turn to mackerel as an alternative. It's widely available in our waters and way down the food chain so we need to be buying and selling more of it, and learning how to cook and enjoy it. I like to treat mackerel more like a steak, and give it flavour and attitude to make it sing. It is so delicious, incredibly versatile and extremely good for you.

I originally made this recipe using sushi grade tuna, but found the texture of the tilapia flakes to be more delectable.
