This is so good, and very easy and quick to make. Serve with brown rice, or with low-carb pita bread. Can substitute light coconut milk, if available, and chicken breasts instead of thighs to lower fat. I have also added edemame, or whatever other vegetables I have on hand to boost veggie intake.

This is a semi-modified version, using less sugar and less oil than the original. I've made this using my own spices instead of the packet, to reduce the sodium. You can really play with this recipe and tweak it to your liking.
