I didn't have regular soy milk, so I used chocolate, and it turned out just fine. Also, Instead of the oil and much of the honey, I just added extra (1 C.) banana.
This is a big batch recipe, and these muffins freeze well.
Healthy, 5 gr fiber per muffin, easy to make, can halve recipe to make only 12, I freeze some. Why buy fancy muffins when you can bake your own and know exactly what is in them! NO ONE will know these are healthy, they remind me of very dark chocolate cupcakes.

This one saves about 300 calories from fast food burritos that you drive through and pick up. I make up extra and wrapp in plastice wrap individually and store in the freezer. I grab one and take it to work to warm up in the microwave for a filling warm breakfast. Lots of protein keeps me full longer! Save even more calories by using La Tortilla Factory Whole Wheat Fat Fee tortillas (but they are more than twice the price). Warm the tortillas a little in the microwave or skillet to make them easier to wrap.
