This is a giant, salty, delicious omelette that I created to satisfy my cravings for one of my favorite breakfast from my old life: irish eggs benedict. This omelette tastes salty and meaty and seriously satisfies my hunger without blowing my calories or cholesterol ranges. It also takes less than 20 minutes to prepare (if you keep cubed precooked chicken breast around)
This isn't my recipe but rather comes from blogger NYC Pink (nycpink.blogspot.com) with one small modification (less oil / more applesauce). When I make these, I don't measure out the spices but rather use 2 Tsp. pumpkin pie spice. Please visit the blog. She's pretty darn cool.
I use this to get rid of leftover rice or when I want a change from oatmeal, sometimes for a snack!

Adapted recipe from internet. You can form these into balls and fry as a fritter or place them in a pan and cook like a pancake. Super tasty - no syrup needed!
These are very tasty!
Delicious granola with oats, pumkin seeds, sunflower seeds and flax seed. This makes a great snack by itself or breakfast with vanilla soy milk.
