I found this recipe in a running magazine a few years back. I changed a few ingredients and it makes really good low calorie banana bread! I love eating this for breakfast with my yogurt and granola!
This is one variation of my mom's basic coffee cake. One day a friend gave my mom a jar of figs so she just made a cake out of them. You can also use this recipe and substitute bananas, cherries, apples, or just about any other fruit for the figs. When you are using a more or less liquid/juicy fruit, adjust the amount of yogurt you use. Make sure that your total liquids are about 2 cups.
I found this recipe online, though I altered it just a tad. I have the nutrition as 1 serving, but it could be split into 2 small servings.
The original calls for steel cut oats, but rolled oats makes it a quicker breakfast, as well as being something that's more likely to be in the cupboard. :)
fat free and sugar free and even my husband who won't eat splenda liked them. Add other fruits to change the flavor, like dried apricots etc. Next time I'll try wheat.
I also just use cinnamon,cloves,ginger and nutmeg rather than pum. pie spice. I buy cranberries after Thanksgiving when they go on sale and store in freezer to use all year long.
