In an effort to create an oat bran muffin that was edible, yet as low in sugar content as possible, I've invented this recipe. I continue to tweak the ingredients each time I make them and I've list some of the replacement ingredients that can be substituted if desired/necessary.
I had some left over sauteed shrimp from PF Changs and through this together. My 12 year old daughter begged me to make it for her next weekend!
eggs with other ingriedients that you would love followed with 2 slices of bread makes a perfect breakfeast!
Mix all ingredients until batter is smooth. I made these into silver dollars as oppsed to regular sized pancakes. Yealds about 4 to 5 servings roughly.
Low carb, gluten free, breakfast option. I make it in muffin tins so it is easy to freeze and heat up for breakfast on teh run.
To reduce calories and cholesterol and fat considerably, substitute some or all of the eggs with egg beaters.
For the eating plan which I am following, this should count as 2 proteins, as far as I understand the plan.
Easy, basic beef gravy. I use leftover roast. Or if there is left over steak, I mince it and freeze it until there is enough for this gravy. Spices you might want to add include Pepper, salt and tumeric. Onion and Garlic are also good.
