This low carb treat is awesome for busy folks who want to eat healthy but are always on the go. You can make a double batch and freeze them as they freeze very well and they are very quick and easy to make.

These are a variation on banana muffins, using flax seed and olive oil. They are a bit high in fat, but it's almost all good fat.

Combine bananas, egg, erythritol, and vanilla in another bowl. Mix well and then add applesauce.
Add dry ingredients to wet ingredients, mix, and divide into 14 muffin cups.
Bake for 15-20 minutes at 350 degrees, or until a toothpick comes out clean.
Made with real eggs, this is a nice brunch item, or dinner.
