I lightened a favorite banana bread by using whipped egg whites. The original called for a cup of sugar, and I don't like the taste of sucralose, so I substituted half the sugar with sucralose (Splenda).
I made this in a crock pot, but you could do it on the stove too! It's a nice, easy, delicious breakfast to wake up to if you leave it in the pot overnight. Plus, it will make your house smell amazing, and give you incentive to get out of bed!

This is a great homemade granola. Many like to eat it plain, but our favorite is to mix a half cup of granola with a half cup of lowfat plain vanilla yogurt.
Cook potatoes in a pan with the oil. Add the eggs with rest of the ingredients after potatoes are cooked for 7 minutes and spread evenly on top of potatoes and cover and cook on low flame for 10 minutes flipping at the end of 7 minutes.
