I took the King arthur recipe and replaced most of the butter with applesauce, but also replaced the eggs with egg beaters and I reduced the amount of "grease" and added 1/4cup extra blueberries!

To ease the morning rush, mix the dry ingredients the night before. This is a great cereal mix to keep on hand.
Frittata made with mostly egg whites, lots of veggies and a little bit of sausage. Balance well with a whole wheat english muffin or my lightened up sweet potato biscuits.
I used canned coconut milk, but of course you can use homemade if you want it completely raw. Depending on how sweet the fruit is, you may need to add a bit of sweetener. I put in stevia if the peaches aren't sweet enough.
I initially found this recipe on SP. I made a few minor tweaks to it to fit me. For onion, you can use red, yellow, sweet, or whatever your little heart desires. For cheese, use either feta or goat, or whatever you want. I believe the recipe I had found on SP called for goat cheese, but at the time, I had none, and could not find any, so I started using feta.
This recipe is awesome, delicious, and filling!
You can chop your onions and slice the tomatoes the evening before, to make for a quick breakfast in the morning.
Good, healthy, and you can make ahead and freeze for a quick 'grab 'n go' breakfast.
These muffins are not too sweet, and use two whole grains for a little fiber kick. They are are a great way to use up overripe bananas.
