This is a good protein bar to have for breakfast or before a workout. I know the calories are a bit high, but has lots of "good for you" ingredients and a good meal replacer. This was just an experiment to make a high protein bar at home using ingredients that I had on hand. I think they turned out pretty tasty, but let me know what you think!
This is a family favorite brunch dish that I used to make only for holidays. The original appeared in Gourmet April 1999; this is my modified version. I have a person who refuses to eat cheese, but others may want to add a little grated asiago.
As a kid, I was always fascinated with the carrots made out of frosting that adorned the top of carrot cake. This version, made without eggs or dairy but with nutritious carrots, pumpkin, whole grains, and applesauce is reasonably healthy (for a dessert, that is) without sacrificing taste! Use your favourite icing, or just dust some powdered sugar over it.
Altered an old recipe, This is great straight out of the oven, or toasted with jam(not as messy as PB&J) . Enjoy one loaf and freeze the other loaf for later.
No baking. Muesli's a delicious uncooked cereal or snack mix originating in Switzerland. Munch it dry or eat with milk, soymilk, cider or whatever liquid you fancy. Soaking it makes it sweeter. Europeans soak Muesli overnight for a substantial breakfast.

This is a truly simple egg dish- bake once and you have breakfast for the week! Seal individual servings in ziploc bags. Can be frozen- to reheat just thaw in the fridge before microwaving to avoid soggy eggs.
Recipe is modified from my grandmother's recipe. Goes great with blueberries, or topped with lowfat cool whip and sliced strawberries.

Nutritionally, compared to an average restaurant portion, this recipe cuts the calories by close to 300, cuts the fat by 25 grams (including more than 10 grams of saturated fat). The cholesterol drops from 511g to 11g while keeping the carbs and protein fairly comparable!!
