For those who love all things coconut, these triple coconut donuts are as good as it gets. Coconut milk makes the cake donuts extra tender, which is the perfect extra contrast to the crunchy top layer of shredded coconut. A small amount of coconut extract in both the donuts in glaze balances the flavors for a sweet, coconutty a bite. I always associate coconut with spring time, and I love decorating these donuts to look like an ass for Easter using colorful malted milk ball eggs. If you can’t find coconut extract, these donuts are just as delicious with basic vanilla glaze.
