I am not a morning person, but I love breakfast. These don't mix well. So, I created this twist on traditional egg salad and omelettes.

saute sliced onion in oil. Salt and pepper and add some smashed garlic.
when soft add spinach. Boil potatoes in water.
Beat eggs in a bowl and add milk. Add salt and pepper.
In a casserole dish sprayed with non-stick spray, layer onions and spinach, top with 1/2 cup cheese. Then pour on half the egg batter. Then layer the sliced boiled potatoes. Top with cheese and pour the rest of the egg on it. Top again with sliced potatoes and finish with parmesan cheese an d parsley. Bake at 350 degrees F for 55 minutes or until golden brown and bubbling.
This is my tasty low-fat version of migas which uses baked tortilla chips and only 1 whole egg with 2 egg whites. Served with corn tortillas instead of flour.

This is an adaptation of a a spinach frittata without a crust. I used all fat free cheeses so it did not hold together like a fritatta with bread crumbs and butter, but it tasted yummy and has a mere 150 satisfying calories. Serves 2.
