A yummy breakfast treat that seems way more decadent than it really is! I like the consistency of Italian bread, but you can substitute any bread to increase fiber or decrease calories.
Spray 9 x 13 inch glass dish with butter flavored cooking spray. Add potatoes and cheese to prepared pan. Set aside.
In a bowl whisk together eggs, milk, Mrs. Dash, salt, pepper and garlic. Pour over the potatoes. May cover and refrigerate overnight before baking.
Bake for 45 to 55 minutes 400 degree oven or until eggs are set in ceenter. Let cool on a wire rack for 5 minutes before serving.
May also add 1 1/2 c of chopped ham, turkey, or shrimp
Canned salmon with assortment of grated and chopped fine veggies.

Hearty waffles, gluten free and low carb. Full of fiber! I tried them first with heavy cream instead of milk, but changing to milk did not change the carb content by much, and really reduced the fat!

I have finally perfected my banana muffins! These are delicious and moist with just a hint of chocolate flavor. The instant espresso powder in this may seem like a strange addition, but it is there to heighten the chocolate flavor and doesn't impart any coffee taste. The strawberries give little bursts of sweetness and leaving some chunks in the bananas brings out the banana flavor. Make sure to use previously frozen bananas OR very ripe ones-- you will have to put a LOT more sugar in to counteract a green or yellow banana in this recipe, which only calls for a quarter cup.
