This is an adaptation of a recipe my Dad has made for years. His had a full cup of sugar, that I've cut by 3/4, and a full cup of oil that I've replaced with apple sauce. It's a great cake to serve with coffee, not overly sweet.
Does not include: 2 tsp baking soda, 2 tsp baking powder, 1 tsp of cardamom, 2 tsp of vanilla extract, 2 tsp almond extract
