Great for camping and picnics, very simple. Meat eaters have eaten it and not known it wasn't meat!
I buy a chili mix made of Texturized Vegetable Protein with Chili Seasonings already added from my local natural foods store.
Instead of that, I've also used plain texturized vegetable protein (TVP), about 0.6 lb., and added my own spices - cayenne pepper, onions, carrots, tomatoes, chili beans, salt & pepper or some combination of what's in my garden. Your favorite chili spice mixture would work too.
I picked a fresh eggplant from my garden but didn't have the ingredients for regular eggplant Parmesan so I made up a recipe with what I had in the frig. Come out tasty and fairly healthy. Adjust amounts to your own taste. The measurements here are approximate.

My adaptation of a sloppy joe. I love the flavors of chili and cumin and incorporated them into a mixture that I serve on toasted bread spread with yellow mustard and with 1/4 cup grated cheddar cheese on top.
Sauteed all the veggie the mixed with the egg, egg white, cheese and milk. Popped in the oven for 25 minutes until the tops were a little brown. I used silicon muffin cups so the cook time was a bit higher
