I used rotini pasta because that is what I had but Dreamfields makes an elbow macaroni if you can find it.
I made this from leftover beer-butt chicken from the barbeque. The amount of white meat and dark meat is approximated, but I think it is fairly accurate. I started with 14 oz. of chicken. Delicious!
This is a great cookout or family get together dish. But it works for everyday meals too.
The addition of cottage cheese in this recipe makes it creamier and healthier and works as a substitution of salt. Serve with baked tortilla chips or over fish tacos for a tasty treat.

I took out the tomato sauce from this recipe, and used a whole can of the paste (6oz instead of 3oz) as I could not find a 3oz can.
This is the only way that my husband will eat lentils, and has become a staple in our home.
Doesn't cost much, especially when they're fresh and in season at the market, but it sure tastes like it. Insanely rich and flavorful for very little caloric impact.
