This easy and tasty risotto makes a nice winter supper. I'd serve it with a salad made of raddicchio, endive, celery, and a few sliced Kalamata olives.
One of my favorite childhood memories is eating Grandma's 'cabbage casserole'. It's one of those things where you just layer 'stuff' in a pan and bake, but boy, is it good! This version substitutes ground white meat turkey for her ground beef and brown rice for the white rice she used. It's every bit as good, though, as Grandma's -- and better for ya.

Although a little high on carbs, if you plan ahead, this makes a delicious dinner treat! This is a favorite of mine, and it includes shrimp and vegetables with a whole wheat pasta. Add more vegetables or serve with bread if desired.
