This is a much healthier alternative to regular meatballs. They're also pretty delicious. They taste great with spaghetti and sauce. I prefer to serve them with Trader Joe's Organic Whole Wheat Spaghetti and Trader Joe's Garlic Marinara Sauce. Sometimes the mix can become a little squishy and so we just use it as "meat sauce" instead of rolling into balls. If you wait long enough for moisture to evaporate, making balls should not be an issue. As meatballs they are even better the next day. Me and my boyfriend (who is vegan) adapted this recipe from the recipe here: http://www.grouprecipes.com/96989/red-lent

You can prepare this recipe with pork or beef; adjust the seasonings to taste (cooking times remain the same).
This is a low carb casserole that uses Dreamfields low carb pasta. With only 5 grams of digestible carbs per serving, now you don't have to miss out on your favorite meals when doing a low carb diet!! The total carb count for this casserole is only 13 grams per serving!!!
This is so simple & so good ... I usually use stew beef instead of chuck roast.
Don't let the calorie count scare you -- this has about 800 FEWER calories than Olive Garden's alfredo, and provides everything you need for the perfect, balanced meal, loaded with whole grains, lean protein, and fresh veggies.
Plus, Alfredo is really sexy -- hence the serving for two!
I came up with this because I didn't want to make my house really hot from the oven and I didn't have any lasagne noodles.
