Found an old recipe and had to mess with it a bit to make it lower cal (would suggest smaller chicken breasts then what we used, they were REALLY big)
The original recipe I found for this came from a "Casablanca Cookbook." It called for apricots, all kinds of spices, and a few hard to get ingredients. I improvised with what I had and have made it since the same way. It's very versatile but tastes great each time.
Taken from November 2010 Cosmopolitan. The original recipe calls for shrimp, but my father is allergic so I adapted it with beef to account for his needs.

I took a recipe that a friend had and tweaked it a bit (to make it a bit healthier)....it's AMAZING!! Enjoy! I served it over tri-color fusili pasta, but it would be equally delicious with rice, or even patty shells or biscuits. (recipe does not include nutritional info for pasta, etc)
I could come up with dinner so, I threw this together & called it dinner.
It didn't turn out bad & the Kids bought what excuse I used to call it. LOL.
Totally yum! Rich creamy lasagne with touches that are great for you, and reasonable calories, sodium, etc
Serve over jasmine rice. To add extra flavor to the tofu, sauté it in a small amount of oil until golden brown on all sides before adding to the curry.
