Just a little twist on a traditional dish. Using sesame oil instead of vegetable or canola and brown rice instead of jasmine long grain.
How I learned to make it from friends of family! Yes, the fats are alarming and probably from the chicken and cannot be helped. You can probably make a healthier version of this with shrimp.
Note: I omitted the usual Fish Sauce because it is not listed and it is so salty that I usually try to omit it or use very little. However, if you aren't watching your sodium as closely as I am go right ahead! It really does add an authentic thai flavor.

I made this for Thanksgiving last year as adopted from the William Sonoma Dressing recipe. It was really, really good - but had too much butter - so I cut it down for the recipe provided. I also halved the amount of nuts. Just a hint is great.

This is a yummy chili that can feed the whole family. Spicy enough to wake up your nose, mild enough not to start your mouth on fire. This is also easy to modify by changing up the Rotel. You can switch to diced tomatoes to reduce spicy-ness, or switch to the Hot Rotel for extra spicy.
