This is my sister-in-law's recipe, that I changed to make more low fat. :) It's my husband's all time favorite meal.
This is a basic taco dinner with 93% lean ground beef. My family eats home made tacos at least once a month. I just created it in the receipe to create less work to add to my nutrictional log.
Similar to the box meal, this recipe has been modified a little to make it healthier.
This dinner is easy to make & a great rib sticker. You can also substitute pork loins for the chicken. It's good either way. I'm sure hamburger would be equally good too. You can also add any veggies you like, i.e. zucchini, mushrooms, etc.
This is a modified version of a recipe taken from AllRecipes.com. Penne rigate, chicken, pesto, parmesan cheese, and sundried tomatoes combine to make a splendid Italian/Mediterranean style pasta dish. Add steamed spinach or broccoli to get in those vegetables! This is not exactly a diet recipe, but can be made "healthier" and is better than the recipe it was inspired by.

This recipe is a wonderful use for cheap white fish-- it's SO flavorful and yummy with very little added salt, and it's about 300 calories per serving INCLUDING rice! You can use less garlic or less turmeric if you don't love them as much as we do.
This dish can be made in the crockpot or on the stove top; the ingredients can be put in all at once so it makes a great dish to put in the crockpot as you head out to work!
Our household periodically cooks chicken leg quarters and breasts then skins and debones, chops the meat and puts it up in ziplock bags in the freezer for uses such as this.
