This healthy and inexpensive dish was inspired by the beautiful and cheap green cabbages available now at our farmer's market. You can change the spice balance to your tastes - more spice, less spice, Italian spices, Mexican. You can also use meat instead of TVP.
This is one of my favorite "OMG I have only 15 minutes!" meals. It's super creamy and delicious, and prep time in no time! I use a magic bullet for this as it's microwave friendly, but you could use a food processor or blender if necessary. Obviously, you could use fresh vegetables for better nutrition-- which would up the prep time, go to a low sodium pasta sauce (but I LOVE my salt), or cut out the parm cheese to cut out calories, but the parm really fills out the flavor and my goal is to make something healthy, fast, and really really delicious. NOTE: This is the sauce only, with veggies. I use it with spaghetti squash, but it's also great over scrambled eggs, barilla plus pasta, brown rice, or any thing else. It makes A LOT of veggie saucy goodness-- you could easily split this into two servings, but with the low calories, you can afford to splurge!
My Mom's recipe. She had to make it meaty for Dad, but light enough for her. I also use this for pizza sauce.

An easy & Simple Spaghetti Sauce that i low in calories & taste Great.
An excellent vegetarian lasagna, my family loves it. I make it in a 9" square pan and cut it into 9 generous servings. I like to use the no-boil lasagna noodles because they are shorter and fit my pan better, but you can use regular noodles and break them to the right shape. You may want to add extra sauce to help the noodles cook if you do that. You can use just zucchini or mix zucchini, yellow squash and add in some bell peppers for a more colorful lasagna.
Found this recipe on the Betty Crocker website. I LOVE lemon and rosemary is my favorite herb. Couldn't go wrong with this combination!

*I substituted lemon instead of using lime, because that is what I had on hand.
