You have to make this and taste it to beleive as my husband says, "It's better than real mashed potatoes". It's quick and easy too!
The simplest way to prepare chicken and once it's cooked you can use it in a variety of ways.
Skinless thin chicken breasts - brush each side with Dijon Mustard & dredge in flour. Saute chopped green onions & fresh mushrooms. Put chicken breasts on 12" piece of aluminum foil and top each breast with these vegetables. Then put a dab of butter and 1 TBLSPN. reduced sodium soy sauce on each chicken breast. Fold foil over chicken & seal edges leaving a "tent" above the chicken. Put tent chicken in baking dish and Bake at 350 for 25 minutes.
These meatballs have a little bit of everything, adjust amounts and types of spices as desired.
serve with a mixed green salad drizzled with fat free Italian Dressing or balsamic vinegarette

I tossed it together using leftovers and vegies before they went bad. I preboiled the beans in water on stove for 1 1/2 hrs rinsed and separated skins out then put in slow cooker with veggies to cook all day.
This awesome vegan alternative to ordinary lasagna is only 78 calories per serving and super high in vitamin A! We enjoyed in cold the next morning just as much as hot from the oven for dinner.
This is a great dish I used to enjoy at a small cafe in the little town I lived in, in Spain. I've omited the cappers because I don't like them but you can add it. It serves 6 because that is the size of my family. I use Tasty Bird chicken breast tenders (couldn't find them online) that are 110 calories for 3 tenders. I also HIGHLY reccomend using baby portabella/crimini mushrooms. They have MUCH more flavor than buttons. I hope you enjoy this as much as my kids, hubby, family, friends and I do!

Modified recipe after watching Ellie Krieger video. It did not give measurement for the Ricotta. I used lower fat ingredients. She recommended tomato sauce that did not have more than 500 mg sodium per serving and included olive oil in ingredients. I chose the brand listed as I use homemade sauce.
