This is a modified recipe from the Better Homes and Gardens Cookbook. It is made with homemade alfredo sauce.
My dad makes a soup kind of like this, but with more vegetables. Don't be fooled, this soup is a MAIN COURSE. I'm entering this one as is because my partner doesn't like a lot of veggies, but I also like to add carrots, zuchini, squash to this in lew of some of the potato. I know that it's high sodium and kind of "carb-y" but it's low fat, not very high in calories, and super delicious. I sometimes leave out the potatos when I use pasta or pasta when I use potatos...making it even lower calorie. it's so easy, that you can pretty much play around with it any way you like..sometimes I make it thick like a stew, sometimes I add more liquid so that it's very soupy and comforting and delicious... just make sure to adjust your nutrition info to suite your changes.
delicious low cal risotto recipe. Swap out the tomoatoes and cheese for blanched, fresh veggies too; a great option. (Calorie count on this recipe accounts for mozzarella, asparagus and zucchini; my variation for tonight.) This is my go-to recipe for entertaining!
fry bacon until crisp, break into pieces for later addition into salad, wash and mix spinach and lettuce. For dressing blend one beaten egg with sugar, salt, vinegar to taste, and finely chopped onion. Bring dressing to boil. Refrigerate. Either prepare ahead and toss or allow others to blend their own at table. I use regular white vinegar (its not in the calculator.
I had some veggies that looked like they were about to turn, and I had to use them all up, so I created this stir fry. I really like it spicy, but you can omit or reduce the amount of spice you want in it and it will still taste good.
If you're in a hurry to fix dinner this is a really easy recipe that takes less than an hour including cooking time. You can also use fresh cooked chicken and lower calorie butter and soups.
