I used to make a similar recipe that I found in a Campbell's Soup Cookbook for my Mom and sisters as a teenager. Since I love having a crock pot I thought I would throw everything in and see how it turned out! It's stewing away and is making the house smell delicious right now!
We used to make this recipe for moose or caribou and cooked it in a cast iron stew pot in the oven on very low heat, before the days of crock pots. It lends itself very well to lean cuts of beef with little fat and is great for entertaining during football season!
A couple of people have had problems reproducing this, so here's my disclaimer... we love it, I invented it, it's been served to pro chefs and folks from India, and they've all liked it. However, the reviews are not all positive, and maybe there's something off about the preparation. I don't know. But please, if you MUST review, be gentle. I've got them shared so my family can add their portions to their menus. Everyone else's opinion is totally optional.

This is great, but if you are wary about calories try substitutung with lower calorie spread and a low fat swiss cheese. We also use the Low Sodium Stove Top Stuffing. Cuts the sodiumin half.
I love stuffed peppers. By changing the ingrdients to turkey instead of beef and using whole grain rice, it's now a healthy, YUMMY alternative packed with nutrition. Cooking the rice ahead of time and storing in the fridge saves time later.
Fast & easy. I like to experiment with this recipe and make it different every time. Delicious with cheese or lime-marinated chicken!
