This is a very inexpensive protein meal that can be made in big batches (this makes almost 20 cups), frozen, refrigerated for up to a week, can be watered down to use as a soup, is great reheated with cauliflower, carrots, peas, spinach, squash, added to it for a complete meal and is, of course, fabulous with a half cup of brown or basmati rice. If you don't have all the spices, double on the the curry powder, it is still pretty tasty--I sometimes use a quarter cup of curry paste in a pinch. This could also easily be made vegetarian and be VERY good! I added beef because my husband prefers meat in his dinner.
Very Garlicky. You can always adjust the amount of garlic. Traditionally this is served with olive oil drizzled over the top, but I did not include that in the nutrition info. It's also good used as a spread on sandwiches in place of mayo.
