I make this in batches early in the week. It's a very spicy, strong flavor by itself, but once you pour it over a salad with fresh vegetables, the flavor is considerably weakened. I blend in a blender so it completely emulsifies. The dressing never separates before I finish off the whole batch! If the garlic is not fresh, use more. This recipe is based on very juicy garlic. Also, remove any green sprouts in the middle of the garlic, if any. Otherwise it adds a bitter flavor.
