Crustless quiche made with turkey sausage and roasted vegetables. The sausage and vegetables can be cooked ahead of time and refrigerated until ready to use. I prepare this and refrigerate the uneaten portions to reheat for a quick breakfast during the following week.

This is how I make Chicken Salad. I like to stuff 5 oz. of it into a tomato that I hollowed out or place the 5 oz. on two deli thin rounds that you toasted with a slice of tomato on top.
