This is a great lower-carb but also calorie friendly recipe; I found the original on Recipegal.com and have modified it to make it a little lower calorie. You could probably use more egg whites or Egg Beaters and skim milk or turkey bacon to help cut back on the calories too. I also just use a 9-inch pie pan instead of a quich pan and it works great!
Eggplant is sliced, brushed with olive oil and grilled or broiled. Top with your favorite ricotta filling, roll up, top with sauce and cheese and bake for 30-40 minutes. Make this your own by jazzing up the ricotta filling with some roasted peppers, spinach, artichokes, etc...
