I just made this tonight. It is based on another sparkpeople recipe that I found that used chicken. Since I'm living in Europe it was hard for me to follow exactly, so I made due and it came out great.
I figured that I would post it because I am assuming that many people have post-thanksgiving turkey that they will be trying to do creative things with for the next couple of weeks, so this is a healthy, delicious, high-protein option. Enjoy!
The low-cal, flavorful pesto sauce and grilled chicken and sweet peppers in these wraps make it SO GOOD. And SO HEALTHY! What a wonderful lunch! I usually eat both wraps at once and it's still right at 400 calories.
This is a very filling low carb breakfast, lunch or dinner. Be sure to drain as much fat off of the chorizo or it'll be a bit rich. Feel free to substitute different cheeses or add more onion or peppers. 2.1 net carbs per serving
It's only "Christmas" because of the pretty green cilantro and bright red bell peppers. Really simple to make, and good for any time of year. Good on a bed of dark, leafy lettuce or on whole grain bread as a sandwich, or at a party, served with good crackers.
This is a family favorite during the warm spring and hot summer months. We make it at least once a month. Of course, the kids pick out the olives-but...what are ya gonna do?
I use these same exact things to make my deviled eggs-except I don't chop the egg whites.
2 c refried pinto beans
1/2 c Mozzeralla grated cheese
12 tortillas
lettuce , tomato & onion
1 CHICKEN BREAST
1 PKG MOZZERALLA CHEESE
2 CANS CAMPBELLS CREAM OF CHICKEN LOW SODIUM
1 CHOPPED TOMATO
1 C ONIONS
2 FRESH JALAPENOS
10-12 CORN TORTILLAS
Lovely hoummous (85g per 1/4)
Can add lots of lovely things - roast pepper, onion, olives etc etc
An interesting and unusual wrap with artichoke & mushroom antipasto
A low fat, low cal version with black olives. Lose the tahini to make even less calories. Try chilli or roast onion instead of olives.
So quick to make..perfect in a wrap
Warm for supper or codl for lunch - lovely and versatile egg and potato dish.
