This is great added to a green salad, or on low calorie whole grain bread. Also good in a tuna melt w/low fat cheese. Recipe makes 3 servings (depending on how much you pile on your salad/sandwich lol). Full of protein!
This recipe is a single serving for easy nutritional calculation, but I usually make 4 servings at a time (1 package of tortillas, 2 chicken breasts, etc.). 1 full quesadilla is more than enough for a nice filling lunch, but can also be cut up as an appetizer at your next party!
This is one of my husband's signature recipes. It might just be my favorite! It's a nice twist to chicken salad that's vegetarian and could easily be made vegan with a different chix substitute (Quorn isn't vegan) and substituting Vegenaise for the mayo (how we actually make it, although it's got more fat that way). This isn't exactly a low-fat recipe, but it's low in saturated fats, so it's mostly healthy fats. =)

This is a lower calorie cheese option. Great spread on crackers and sandwiches, Or as a veggie dip. You can change the type of cheese or the salt/herb combinations to vary the flavor.
