This dish is DELISH. It was inspired by a craving I had, and I just went with it. It came out wonderful.
Don't be afraid of this salad's high fat content. It originates from the avocado and is, in fact, mostly monounsaturated fats. Fats that help raise good cholesterols that keep your arteries sparkling. Avocados are also a great source of natural omega-3 fatty acids that keep hair and skin healthy.
The olive oil in this recipe has very similar health benefits to the avocado.
The Roma tomato adds a rich red color to the salad which tells us it's carrying antioxidants through vitamins A and C. Romas also carry other heart-healthy nutrients such as Vitamin K and Potassium.
In moderation, feta is a wonderful source of riboflavin, protein, calcium, phosphorus and Vitamin B12.
