The hotel my husband and I stayed at in Chiapas Mexico served Green beans and Potatoes every day for Breakfast. This was as close as I could come to a similar recipe.
I borrowed this from "Bobbi's Kozy Kitchen" Slow Cooker Chicken Quinoa Enchilada recipe, and made it vegetarian friendly.
This is a party sized batch which usually my husband and son want me to keep a potion of it for at home.
This recipe originally came with a recipe for broiled steak and we liked it so much with the steak that I started and kept making larger portions to serve with chips. It is very good on steak.
I have no idea where the original recipe came from, it has been over 15 years since I made that broiled steak recipe.
As a chip dip, this is received with high compliments!
Quick and dirty with egg whites and random veggies, with a tortilla as carb support. This is not intended as anything really fancy. It's just something I threw together and is the first example of something I've recorded for this website.
Super easy, however, you will need to add a packet of Hidden Valley Ranch Dressing (I use buttermilk)
This is not your ordinary taco. One of these can actually be an entire meal. Could actually cut in half and make 16 instead of 8 for small appetites. NOTE: This is very high in sodium.
I wanted a taco full of flavor without all the calories. I do not use sour cream or Lettuce so if you do you must adjust for their calorie and other contents. I cook big so I can save for other meals. Less cooking and the more often you eat the same thing, usually the less you eat.
