Can use 1 cup of Feta or Cotija cheese in place of 1 cup of the cheddar. Mexican Blend of cheese is also a very good choice
Layered dish of flavour and spices! Vegetarian. To make more vegetarian, just omit the cheese and assure yourself with vegetarian refried beans.

When I made this recipe I didn't have low-fat cheese but I would def. recommend it and it will bring the calories down. It is super easy and good.
This is really fast and easy, and uses ingredients that are easy to have on hand.
Hopefully a lower-fat version of taco night, due to the addition of red beans, and pre-packaged taco-seasoning doesn't compare to homemade.
