I did not include tortillas in this, and frankly, winged it a bit so season to taste. I tried to include everything I put in there.

My pantry was generous! Very easy for a quick meal. Sodium is high, if you're watching it, skip this meal.

This is my new favorite soup — very easy to make and deliciously flavorful, too. Serve as is, or top with cilantro, grated cheddar cheese, hot sauce, or a dollop of plain Greek yogurt (for added creaminess).

My husband and I like this any time of year, but especially during winter! Add some toppings such as shredded cheese, avocado and sour cream. It's so easy, just add to the crock pot and yum!

On a cold, winter night... This thick soup is wonderful. Leftovers the next day are fantastic! Serving size is 1 cup but you will want a couple scoops of this! Delicious!
