Only 5 main ingredients! This meal cooks up quickly. This is one of my family's favorite meals, paired with a large salad and home made sweet tea. This meal is an all weather food, good anytime for any occasion.
A recipe that can be altered as desired. No beans in this variant, since I am allergic.
Serve with bread or rice, as your pleasure. We had it with some ciabatta bread and 2% milk Mexican cheese.

This guilt-free version is quick and easy and satisfies even the most discerning cheese lovers in our family. They look really cheesy, with 1/2 cup of cheese on top, but looks can be deceiving. The filling is tasty and lower-fat, and the tortillas are softened in the microwave, reducing the fat and calories even further.
Mix 2 packets of cornbread following directions in two seperate bowls, except substituting 1/3 of milk for cream corn in each bowl. Spray with cooking spray 8x8 or 9x9 baking dish pour one bowl of cornbread mixture into pan. Now spread green chili's over the top of cornbread layer. Dollop 6 TBL of cream cheese onto six pieces of the cornbread layer, now pour second layer of cornbread on top. Bake for 20 min. until top golden brown. Serve with honey.
This is really good, you can make it very spicy with hot salsa, or milder, whichever you prefer. I use Santa Fe salsa, so there are not large vegetable chunks. Also, if you don't have garlic cloves, you can use garlic powder to taste.

i am currently a single mom, with a full time job, so this recipe is quick, easy, and really hits the spot. it's caloric value for one serving is decent, great source of protein... although i need to figure a way to cut down the sodium... i hope you enjoy it as much as we do!
