Ran into a similar recipe on a cooking website but made changes to accomodate what I had on hand and I fell in love. This dish is so filling and delicious, yet the lemon lime vinaigrette makes it so fresh and light as well. Yum!
Start with Chicken stock
(I make from boiling the "carcass" of a Rotisserie Chicken. Strain stock, throw out bones)
In Stock Pot:
Add Chicken Stock
1 pound frozen corn
1 can Black Beans or cooked from dry
(strain and rinse all the gassy stuff off)
1 can Black Olives, drained, and chopped
1 can Rotel, pureed in blender if you don't like chunks
1 can tomato sauce, or crushed tomatoes
Chopped up cooked chicken (I use Rotisserie chicken)
Season with Pepper, Cumin, Onion Powder, Garlic or Garlic powder, Chicken Base or Bouillon. WHATEVER you like!
Simmer for several hours, or longer, in a stock pot or in a crock-pot.
After done, smash tortilla chips up and place in bowl, ladle soup on top, top with shredded cheese of choice. I used "Colby-Jack"
Oh, so good!
This is a good protein-filled breakfast! You can make it fit your caloric needs by changing the amounts of beans, cheese, the tortilla etc.
My taco/burrito mix. Top with ff sour cream, tomatoes, spinach, onion and salsa as desired.
Makes roughly 10 1/4 cup servings.
Got the original recipe from a hippie chick back in the 70's! I only changed the ground beef to ground turkey. I am baffled by the calorie count though. I have double checked the ingredients and amounts so I guess it must be right. It is high in sodium. I didn't have any low sodium tomato sauce so here's hoping it is correct.
This is a great alternative to tacos. You don't have the cheese or the taco shells, and you can choose to add the sour cream as a topping on each individual bowl, if needed. I use low-fat sour cream, and I like to use half ground turkey and half ground beef.

Fast and Simple! If you have a low sodium soup on hand and a fat-free sour cream it will cut down on the fat and sodium and still be very tasty!
