I found this recipe in Family Circle magazine, but made a few changes of my own. It's quick and makes a lot of food. Great for feeding the whole family. My version is actually healthier than the magazines and tastes just as good if not better. To make this a little more fun, substitute the fusilli with wagon wheeled pasta.

Recipe Notes: Both cow and coconut milk work well in this recipe. You can also add cinnamon or fruit as desired. Just keep the pancakes small and watch them so they don’t burn.
