A refreshing pasta dish with lemon tones & very filling with the whole wheat pasta!
Caponata is a sweet and tangy eggplant dish. It can be served warm by itself, at room temperature as a spread for crostini or crackers or mixed into a pasta dish. After playing with several recipes, this is my favorite caponata. It is based on Giada DeLaurentis' recipe with a few tweaks of my own.
This is a family favorite and can be prepared in minutes. Serve with some pinto beans and cornbread.
Optional add nuts or blue berries. You may omit the coconut oil to reduce calories.
I usually reserve dressing and add shortly before serving. Can use regular raisins but I find they turn everything brown after it sets for awhile. Same flavor not as eye appealing

Nutritionally, compared to an average restaurant portion, this recipe cuts the calories by close to 300, cuts the fat by 25 grams (including more than 10 grams of saturated fat). The cholesterol drops from 511g to 11g while keeping the carbs and protein fairly comparable!!

This came from my Mom via my sister in law Kim. She doesn't ice them, but rather decorates with some colored sugar for the holidays. First time out I made the frosting too thick - it should be more of a glaze so I'll give it another shot. (I halved the whole recipe, but did not do so with the powdered sugar - oops -they were still tasty!)
