Chipotle chilis can be found with the other dried chilis in markets that cater to Southwestern cuisine. They are smoked and dried jalapeno chilis, so they are hot, but so flavorful that just a bit of this will brighten up a dish--especially good with chicken. Despite that the peppers are Mexican, this dish is more Filipino (though everyone loves it :-).
A Weight Watcher's recipe revised. Original recipe called for fat free mayo and 2 granny smith apples; no raisins.
This is best with the crushed peppers but would be good without if feeding this to children.
I used hot dog relish for calculation; the kind that has mustard in it. It is the closest relish to my zucchini relish.

This is very high in sodium. You could reduce this by using low sodium broth or cutting down on the bouillon.
This makes a nice big salad having two servings of vegetables (according to Mastercook program). Seems more like three to me lol.
