a "foil packet" recipe from SELF magazine, The servings are cooked on a grill in individual foil packets, but an oven could be used instead of a grill. Pair with a pinot grigio or savignon blanc.
Combine all salsa ingredients (everything except the salmon & soy sauce). Can be prepared 6 hrs ahead. Cover & refrigerate. Preheat broiler. Brush salmon w/ soy sauce. Broil salmon until opaque in center, about 3 min each side. Serve with salsa as a garnish.
