I love this salad. It's not the lowest-calorie option out there, but it's full of tasty goodness, and it's easy to make... and best of all, it's different from the majority of salads that are out there.
This is a very tasty green apple salsa - great for people who are tired of tomatoes and still want something with a little kick!
I love ceviche. It's a fresh, easy-to-make Mexican dish that's packed with flavor and is so, so very good! Mine doesn't use shrimp (although you can certainly add shrimp, just double the soaking time), so it's safe for those with shellfish allergies, too! Tastes good as a salad topper, in a wrap, or simply alone as its own salad, and it's a great appetizer for parties.

This is a quick and easy dip that is a crowd favorite. Feel free to add additional franks if you like it really spicy!
I made up this for appetizer to take to a party for a friend who cannot eat garbozo beans due to having gout. The white beans make a very smooth and creamy textured hummus. Several people asked for the recipe. I make it all the time to pack for my lunch on the go- along with some cut up celery, green/red peppers and cucumber. It keeps in teh fridge for a week or longer.
One-pot mac and cheese - no box or cheese powder required! Mix in kale sauteed with a little shallot to get some veggies!
My boyfriend's absolutely WONDERFUL homemade pizza recipe. We cook it on a stone, and if you have access to one - I highly recommend it! If not, just pre-bake the crust for a few minutes to ensure it gets fully cooked.
I made this recipe without butter using olive oil when mixing the bread crumb mixture, cuttin the calories. The original recipe called for 1 1/2 sticks of butter.
You can leave the beans in or out of this soup, or omit the chicken and make it vegetarian. Before serving, sprinkle some low fat cheese and toasted tortilla chip strips.
This is a great recipe for pot lucks or parties. It's very easy to make! You can make it and use it as a dip or like a chili. Just put it in bowls with some shredded cheese and some tortilla chips.
