Sweet, fruity and full of protein, this chicken salad is just like Jason's Deli but without the fat.
Flavorful (and healthy!) alternative to black beans and rice.
Cream cheese textured, delicious and healthy sandwich and bagel spread. This makes quite a bit of spread. Can be frozen in small servings. (Had trouble correcting an error in portion size on my recipe. Tried to calculate 8 servings per recipe...)
This is a lower calorie cheese option. Great spread on crackers and sandwiches, Or as a veggie dip. You can change the type of cheese or the salt/herb combinations to vary the flavor.
This is actually pretty good! My skeptic husband says that it would probably fool some people and that it's pretty good, too! I first tried the recipe from the box of Mori-Nu Tofu, but changed a few items to suit our taste. Please feel free to do the same!
This is a wonderful shilled chicken salad. It is perfect for a light lunch, with some fresh fruit. I usually use a crusty wheat bread for the sandwiches! Yummy!
if you use low-fat or fat-free mayo, this is an excellent low-fat source of protien and potassium
168 calories for 1/2 cup, you can make it with Greek yogurt for even less if you like the taste
We used to have a Specialty Deli Cafe here in our town that made the most delicious Chicken Curry Salad with chopped apple and nuts. I decided to take a shot at it myself but with leftover Pork Loin from last night!
inspired by this recipe but changed up a bit http://www.inspiralized.com/2013/07/28/ski

This is one of my husband's signature recipes. It might just be my favorite! It's a nice twist to chicken salad that's vegetarian and could easily be made vegan with a different chix substitute (Quorn isn't vegan) and substituting Vegenaise for the mayo (how we actually make it, although it's got more fat that way). This isn't exactly a low-fat recipe, but it's low in saturated fats, so it's mostly healthy fats. =)
Take some light sour cream and throw whatever veggies you have on hand into a dip :) With a small inexpensive "food chopper"
