Great LF chicken salad!! Fantastic & low carb on a bed of lettuce or low carb whole wheat wrap! You may also make into a healthy sandwich with your bread of choice. (Nutrition info is for the chicken salad only).
You may also substitute hellmans light mayo for the miracle whip. (This will increase your cals by 5 and fat by .6 grams per serving)
Another option is adding in 1 hard boiled egg to mix it up a bit. Keep in mind this will also alter cals/fat content.
*If you feel this serving size is too large for you, you may reduce the serving size so each recipe feeds 4 (this will in turn reduce the cals/fat per serving).
I love a good coleslaw, especially in the summer. I haven't found one the rest of my family really enjoys. That is until this one. Everyone loved it and even wanted seconds. I didn't even get any leftovers the next day!

Bake whole skinless chicken breasts until internal temperature reaches 180 degrees. Cool then chop coarsely. Finely chop celery. Slice grapes in half. Toast walnuts for about 6 minutes at 375 degrees, Cool the nuts. Combine all ingredients with the mayo and mustard. Add salt to taste. Yields 4 cups, or 8 1/2 cup servings
