Hollandaise sauce is a wonderful naturally low-carb topping for omelets and quiches as well as Eggs Benedict, broccoli, asparagus, Veal Oscar, and many other foods. Making one the traditional way (double-boiler) is really not necessary. You can make hollandaise sauce for one person in less than 5 minutes using ready-at-hand ingredients, utensils and a bit of microwave cookery know-how.

This is a great whole grain muffin recipe that is moist and tender. Makes a huge batch of batter that keeps very well in the refrigerator. You can bake a dozen (or more or less) at a time to always have fresh muffins. It works great to add whatever mix-ins you want to customize your muffin experience (or to accommodate personal tastes).
NOTE: The nutrition info does not include any mix-ins. I calculated based on 8 dozen, but obviously you'd have to adjust if your muffins are larger or smaller than mine.
My mom used to make this for me when I was a kid. It's easy and very filling!

Absolutely delicious! Who doesn't love potatoes and cheese? These either bake in the oven or can be done on your grill for a dinner time delight anytime of the year. If you don't like the vegetables listed, switch it up with your favorites.
Low in sodium, and fat. Extremely healthy and flavorful.

My daughter gave me this idea. I use it instead of margarine on my toast in the morning. You can also use it as a cream cheese replacement in recipes. It's not as creamy as cream cheese but it works just as well and has more protein and much less fat. I'm even going to try using it as a fat replacement in regular recipes to see if it works there too.
These are great in tomato sauce or any other type of sauce. You may want to triple this recipe and freeze some for later.
