It doesn't get much healthier than this. Wanted a soup using cruciferous veggies and came up with this. Serve with a healthy sandwich to get a well rounded meal.
So easy and tasty. High in fiber. Freezes well. I use mixed veggies that have lima beans in them. I will also add any leftover veggies that I have.
In Quebec, this soup is usually made with dried yellow soup peas. If they are not available, use yellow split peas. Try to use leaf savory, not ground.
Very hearty and filling! I used a no name brand chicken broth so the sodium value may a little higher than if you were to use the type indicated in the recipe. The original recipe indicates that there are 191 calories, 8 g of fat, 27 g of carbs and 5 g of protein.
A great raw soup that can be warmed up, too, and is just as delicious!
This recipe is an adaptation of a recipe from a restaurant in MA. This is lower sodium, and utilizes ground turkey instead of beef, so is lower in fat.
Start with a broth base, brown rice, garlic, then add leftover pasta/veggies/meats that would make sense (to you)!
I threw this together with some leftovers. I'll probably make a similar batch without the seasoned rice, I knew adding this in would add sodium, but did it anyway. Next time I'll add more of my own seasoning, a bunch of cilantro, and plain rice. Lesson learned...
This version omits the ham hock, and adds tomatoes, diced red pepper, and cilantro.
