Quindim (Brazilian Coconut Dessert)
This is probably not the most waist friendly dessert on this site but it is a modified version of the original and as a result it is less caloric.
I made an angel food cake and needed to find some way of using up the left-over yolks. I had to look no further than my roots to rediscover one of my favorite desserts from my childhood. My grandmother used to make this for me and mine didn't turn out as good as hers, but they still brought me back.
I used a mini muffin pan to bake this. The recipe yields 33 quindins, and each one has just 70 calories. Not bad at all, but the problem is that you can't eat just one!
They freeze well, so go ahead and make a batch! You can also serve them at a party atop flattened baking cups.
