In Spain a tortilla is a type of fritata or omelet. Every tapa bar and every home offers tortilla de patata, but we've added all kinds of other veggies, too.
Super easy to make year round with seasonable veggies. This is the summer version. I like to serve it with crusty bread, hummus, and feta cheese.
The veggies can be either grilled or roasted; this recipe is for roasting.
This recipe is a modification to one I tried before, Quinoa Black Bean Casserole. It was okay, but some adjustments had to be made if my family was ever going to eat it again. Since I didn't have quinoa, and had a pound of ground turkey in the fridge that had to be used, I made some changes. It came out so good, I received more compliments from my husband than I've heard in a very long time! Definitely keeping this one handy!
Since I made this on a whim, I guessed as some ingredients, so feel free to play around! Enjoy!

Holiday Rice - Puertorican poor man's rice very tasty when you are on a low budget. I would modify it with brown rice, pigeon bean or any other ingredients. Actually, this is just a modification of another Spark recipe, Kickin' Creamy Chicken Stew. (My apologies to Aprildawn678!) We added loads of garlic and other veggies, used fat-free cream cheese (and more of it!), cut back on the chicken and spiced it up a bit.
This soup is inspired by the flavors and ingredients of paella, but unlike paella it's simple enough for a speedy weeknight dinner. If you can’t find Spanish chorizo, use pepperoni (add a pinch of smoked paprika if you have it). Serve with warm whole-grain garlic bread.
