Spanish Recipes (Most Popular)
2 lbs ground turkey or lean ground sirloin
3 cans stewed tomatoes
1 can hominy
1 can Ranch Style beans
1 can pinto beans
1 can whole kernel corn
1 can chopped green chilies
1 large yellow onion, chopped
Add:
1pkg taco seasoning mix
1pkg Ranch dressing mix
1 1/2 cups water
Salt and pepper to taste.
Saw a version of this on a cooking show - made some swaps for low fat/low cal ingredients!
Serve with greek yogurt dipping sauce or just by itself!
Cook potatoes in a pan with the oil. Add the eggs with rest of the ingredients after potatoes are cooked for 7 minutes and spread evenly on top of potatoes and cover and cook on low flame for 10 minutes flipping at the end of 7 minutes.
This is supposed to be a side dish, but we use as a main meal with tossed salad. Use box package to start.

This recpie works best if you have a cast iron skillet, or similar that you can transfer from the stove to the oven. Otherwise transfer to a 9 inch pie pan before adding the eggs and bake for 15-20 minutes at 350.
